Barbacoa de Borrego Tacos: (Hidalgo – Central Highlands)

Slow-roasted lamb (or beef cheek for a local twist) marinated in dried chiles and spices, traditionally pit-cooked. Serve with onion, cilantro, and consommé on the side for dipping.
